This is a traditional Passover cookie recipe from Rhodos and Thessaloniki in Greece. The cookies are vegan and made with red wine and matzo meal.

300g matzo meal
150g caster sugar
120g potato flour
250ml vegetable oil
250ml sweet red wine, such as Mavrodaphne

Preheat the oven to 180 C/Gas 4. Oil a baking tray.
Pulverise the matzo meal in the food processor. Mix the matzo meal, potato flour, sugar, oil and wine in a bowl. Shape walnut-size balls. Using the tines of a fork, make a crisscross pattern on each biscuit. Place the biscuits on the prepared baking tray.
Bake biscuits in the preheated oven for 30 minutes. Let cool. Store in airtight tins.
