Masa de vino (Greek Passover biscuits)


    This is a traditional Passover cookie recipe from Rhodos and Thessaloniki in Greece. The cookies are vegan and made with red wine and matzo meal.

    Makes: 50 cookies

    • oil for the baking tray
    • 300g matzo meal
    • 150g caster sugar
    • 120g potato flour
    • 250ml vegetable oil
    • 250ml sweet red wine, such as Mavrodaphne

    1. Preheat the oven to 180 C/Gas 4. Oil a baking tray.
    2. Pulverise the matzo meal in the food processor. Mix the matzo meal, potato flour, sugar, oil and wine in a bowl. Shape walnut-size balls. Using the tines of a fork, make a crisscross pattern on each biscuit. Place the biscuits on the prepared baking tray.
    3. Bake biscuits in the preheated oven for 30 minutes. Let cool. Store in airtight tins.
