Chilli and garlic salmon

    Tasty salmon fillets are coated with fresh chilli and garlic and baked tin foil in the oven so they stay nice and moist.

    • 1 to 2 fresh chillies
    • 2 to 4 garlic cloves
    • a few drops of chilli sauce
    • 1/2 teaspoon ground ginger
    • 1 lemon, juiced
    • chopped parsley
    • salt and pepper
    • 4 salmon fillets

    1. Preheat the oven to 180 C / Gas 4.
    2. Finely chop the chilli and garlic and place them in a bowl or jug large enough to mix all the ingredients together before coating the salmon.
    3. To the mix add the chilli sauce, ginger, lemon juice, parsley, salt and pepper.
    4. Spreed the mix on to the salmon and rub it in. Sprinkle a bit more parsley on top.
    5. Wrap the salmon in aluminium foil and bake in in the preheated oven until flaky, about 20 to 25 minutes.

    To serve

    Serve with crispy potato wedges or vegetable rice.
