Square Scotch eggs

    A variation on the traditional Scotch eggs. The eggs are cooked in a rectangular mould.

    Ingredients
    Serves: 4 

    • 1 packet (350g) pork sausagemeat
    • 4 eggs
    • 1 egg, lightly beaten
    • breadcrumbs

    Method
    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Crack the eggs into a silicone mini loaf pan mould.
    2. Steam the eggs until cooked, about 10 to 15 minutes. Allow to cool.
    3. Divide the sausagemeat into 4 equal portions. Roll out each portion on oiled cling film. Working with oiled hands when handling the sausagemeat prevents it from sticking.
    4. Place a cooked egg in the centre of each piece.
    5. Shape the meat around the egg to fully encase it.
    6. Dip in beaten egg, then dredge in breadcrumbs.
    7. Air-fry, deep-fry or bake in the preheated oven at 190 C / Gas 5 till golden brown. Oven-baking takes about 25 minutes.

    Tip

    For a variation use egg and cheese or just cheese as a filling
