Toum (Lebanese garlic paste)


    This garlic paste is a traditional Lebanese condiment that is served with chicken.

    Serves: 10 

    • 3 small floury potatoes
    • 1 head garlic
    • 6 tablespoons lemon juice
    • 1/2 teaspoon salt
    • 100ml olive oil

    1. Peel and halve the potatoes and cook in boiling water until soft, about 20 minutes. Drain and finely mash with a fork or a potato masher. Set aside.
    2. Peel the garlic cloves and puree with the lemon juice, salt and olive oil in a stand mixer. Add the mashed potatoes and mix briefly just to combine. Serve right away or store in a container with a tight-fitting lid in the fridge until ready to serve.
