My go-to Greek salad

    I know this is not an authentic Greek salad but it's very tasty and ready in 10 minutes! It's lettuce, tomato, red pepper, cucumber, olives and feta with a delicious dressing of olive oil, fresh herbs and red wine vinegar.

    Ingredients
    Serves: 2 

    • Salad
    • 1 bag mixed lettuce leaves
    • 2 tomatoes, chopped
    • 1/2 red onion, thinly sliced into rings
    • 1/2 red pepper, thinly sliced
    • 1/2 cucumber, sliced
    • 10 black olives, pitted and sliced
    • Dressing
    • 4 tablespoons olive oil, or as needed
    • sea salt, to taste
    • freshly ground pepper, to taste
    • 2 tablespoons red wine vinegar
    • 1 teaspoon honey
    • 1 teaspoon Italian herbs
    • 2 teaspoons finely chopped fresh mint
    • 2 teaspoons finely chopped parsley
    • To serve
    • 150g feta cheese

    Method

    1. Place lettuce leaves, tomatoes, red onion, red pepper, cucumber and black olives in a salad bowl.
    2. Mix the olive oil, salt, pepper, red wine vinegar, honey, Italian herbs, fresh mint and parsley in a bowl; pour over the salad. Crumble feta on top and serve!
