Homemade sushi vinegar

    Making sushi requires soaking hot cooked rice with seasoned vinegar. This simple vinegar recipe needs only 4 ingredients and is perfect for your homemade sushi.

    Serves: 12 

    • 475ml rice vinegar
    • 300g granulated sugar
    • 1 1/2 tablespoons salt
    • 1/8 lemon, juiced

    1. Stir the rice vinegar, sugar, salt and lemon juice together in a saucepan until the sugar and salt have dissolved; bring the mixture almost to a simmer over low heat, but don't allow to boil. Remove from heat and allow to cool completely. Store in fridge.

    Great recipe! I halved it because I am not having a big sushi party anytime soon Love the flavor -- it will work great for chirashi sushi, which is basically a bowl of sushi rice with all kinds of sushi and ingredients scattered over, like a deconstructed sushi roll To add this to the rice...cook short grain rice (best in a rice cooker), and spread it out in a large flat bowl or plate. Pour the vinegar over the rice while making "cutting" motions through the rice.
