    Elderflower liqueur makes fabulous cocktails. It is also a nice food gift.

    Makes: 2 bottles

    • 10 elderflower umbels
    • 375g caster sugar
    • 600ml water
    • 4 teaspoons citric acid
    • 750ml grain alcohol (rectified spirit)

    1. Fill a large bowl with cold water and gently move the elderflower umbels back and forth to get rid of any insects without washing out the pollen. Place in a colander to drain.
    2. In a saucepan bring the water and the sugar to the boil till the sugar has completely dissolved. Let cool, then pour in a large jar or a non-reactive container with a tight-fitting lid (no metal). Add the citric acid and elderflowers and stir to combine. Cover and let sit for 3 days in the refrigerator, stirring once or twice a day so the elderflowers are fully immersed.
    3. After 3 days, add the alcohol and let sit for 3 more days.
    4. Strain through a fine sieve and fill into sterilised bottles. Cork and store in a cool, dark place.
