Elderberry cordial

    Prepping elderberries can be a bit messy, it is best to use a fork or disposable gloves to strip the berries off the stems in the kitchen sink, or else you have purple splatter all over the kitchen counter. The taste of homemade elderberry cordial is worth it though! We dilute it 1 part cordial to 6 parts water for a delicious drink high in vitamin C.

    Makes: 2 bottles

    • 1kg elderberries
    • 500ml water
    • 1 cinnamon stick
    • 1kg caster sugar

    1. Wash and drain the elderberries and strip them off the stems with a fork or use disposable gloves. Place in a large heavy-bottomed pan and bring to the boil with the water and cinnamon and Cook until the berries pop, about 10 minutes.
    2. Remove from the hob and add the sugar. Stir to dissolve, then cover and let sit overnight in a cool place.
    3. The next day, press the juice thorough an old but clean tea towel back into the pot. Boil for 5 minutes, until slightly reduced. Fill in sterilised bottles while still hot and cork. Store in a cool place. Once opened, store the bottle in the refrigerator and use within a week.
