Elderberry hedgerow vinegar

    This beautifully coloured vinegar makes a great gift. It is divine in salad dressings. You can vary the amount of sugar to your own personal taste.

    Ingredients
    Makes: 2 small bottles vinegar

    • 500g elderberries, washed
    • 500ml red wine vinegar
    • 2 tablespoons demerara sugar, to taste

    Method

    1. Crush the elderberries with a fork (do not use a food processor or you will crush the seeds and it will be bitter). Mix with the vinegar and sugar in a saucepan.
    2. Bring to the boil and cook until the berries are soft, about 10 minutes. Place in a large glass jar and screw on the lid. Store in a cool dark place for 3 weeks, then strain through a fine sieve lined with cheesecloth. Don't press down the berries too much or the vinegar will be cloudy.
    3. Fill attractive bottles or jars with the vinegar. Store in a dark place.
