Microwave tomato chutney

    I used a 900w micro for this recipe and the results were scrumptious. Don't bother to peel the tomatoes. You can use any apples and onions you have although if you want a crunchier chutney use cooking apples. Couldn't be easier and produces fab results. Delish with any meats or cheeses. Great to make with summer produce but you can make it any time of the year and very good to give as gifts!

    Makes: 2 jars

    • 350g chopped fresh tomatoes
    • 350g apples, peeled and sliced
    • 1 onion, finely chopped
    • 350g sultanas
    • 2 teaspoons salt
    • 2 teaspoons mixed spice
    • 1 clove garlic, crushed (optional)
    • 225g brown sugar
    • 450ml vinegar of choice (I use malt or cider vinegar)

    1. Put the tomatoes, apples and onion in a large bowl, cover and microwave on 900w for 10 minutes, stirring half way.
    2. Stir in all the other ingredients and microwave uncovered on 600w for 24 minutes, stirring every 6 minutes.
    3. If you feel the apple pieces are a bit large just stir with a tablespoon for 30 seconds and this will make the apple pieces smaller.
    4. Let the chutney cool then spoon it into sterilised jars and seal. It's nice to let this 'settle' for three weeks to let the flavours develop even more but my family starts munching after a few days and would eat it on the day if I didn't hide it. Store it in a cool place.


    Use jarred garlic instead of fresh.
