Fluffy peanut butter pancakes

    These light and fluffy peanut butter pancakes are quick and easy to make as a sweet treat for breakfast or brunch.

    • 125g plain flour
    • 2 tablespoons caster sugar
    • 2 tablespoons baking powder
    • 1/2 teaspoon salt
    • 300ml milk
    • 6 tablespoons peanut butter
    • 1 egg
    • 1 tablespoon vegetable oil

    1. Sift flour, sugar, baking powder and salt together in a bowl.
    2. Combine milk, peanut butter, egg and oil in a large bowl. Fold in the flour mixture gently until pancake batter is evenly mixed.
    3. Heat a lightly oiled non-stick pan or flat griddle over medium heat. Drop pancake batter by large spoonfuls onto the pan and cook until bubbles form and the edges are dry, about 2 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining pancake batter.
