Watermelon and mint ice pops

    These frozen watermelon, lime and fresh mint ice pops are just what you need on a hot summer day.

    Serves: 10 

    • 120ml water
    • 100g caster sugar, or to taste
    • 600g cubed, seeded watermelon
    • 1 teaspoon freshly chopped mint
    • 1/2 lime, juiced
    • 1/2 teaspoon grated lime zest
    • 1/4 teaspoon salt

    1. To make sugar syrup: Mix water and sugar in a small saucepan and bring to the boil, stirring to dissolve sugar, about 5 minutes. Remove from heat and let cool.
    2. Blend cooled sugar syrup, watermelon, mint, lime juice, lime zest and salt in a blender until smooth, 1 to 2 minutes. Pour the mixture into 10 ice pop moulds.
    3. Freeze ice pops for 2 hours and insert wooden sticks or handles into the moulds; return to freezer and freeze until solid, 12 to 24 hours.
