Basil chicken stir fry

    This is an easy chicken stir fry and my kids love it. I've also made it with cubed pork. You can spice this dish up with chilli flakes. Although it sounds like a lot of basil, that makes the dish. Serve over rice.

    Serves: 6 

    • 1 tablespoon soy sauce
    • 2 tablespoons water
    • 1 tablespoon sugar
    • 900g skinless, boneless chicken breasts, cut into small pieces
    • 1 tablespoon vegetable oil
    • 5 spring onions, sliced
    • 3 cloves garlic, chopped
    • 3 tablespoons vegetable oil
    • 350g fresh baby spinach leaves
    • 40g thinly sliced fresh basil

    1. Combine soy sauce, water and sugar in a bowl.
    2. Marinate chicken in soy sauce mixture for 30 minutes.
    3. Heat 1 tablespoon oil in a large pan or wok over medium heat.
    4. Cook and stir spring onions in oil for 1 minute. Add garlic and cook and stir for 1 minute. Transfer to a small bowl.
    5. Pour 3 tablespoons oil into the pan. Cook and stir chicken and marinade until chicken is cooked through, about 5 minutes.
    6. Add spinach leaves to chicken. Cover for 4 minutes stirring occasionally.
    7. Stir spring onion mixture into chicken and spinach; cook to reheat onions, 1 to 2 minutes.
    8. Stir in basil and cook until heated, 1 to 2 minutes. Serve!

    This is easy to make and delicious! My husband, who doesn't even like spinach, yummed this up too. I loved it as-is. My husband would have liked more of a sauce to pour over the rice.     We really enjoyed this dish. I read other reviews before I started cooking and I made little changes to make more sauce. Marinade was made of 3Tbl spoons soy sauce, 2Tbl spoons water and 1Tbl spoon sugar. I drained chicken and saved marinade before I fried it in 2Tbl spoons of oil. I poured marinade back to fully cooked chicken just before I added spinach.
