Fresh green beans with cherry tomatoes

    Fresh green beans are briefly boiled and tossed with cherry tomatoes in a buttery basil sauce to make the most of summer's green beans!

    Ingredients
    Serves: 6 

    • 675g fresh green beans, trimmed
    • 350ml water
    • 60g butter
    • 1 tablespoon sugar, or to taste
    • 3/4 teaspoon garlic salt
    • 1/4 teaspoon freshly ground pepper
    • 1 1/2 teaspoons chopped fresh basil
    • 300g cherry tomato halves

    Method
    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Place green beans and water in a large saucepan. Cover and bring to the boil. Set heat to low and simmer until tender, about 10 minutes. Drain off water and set aside.
    2. Melt butter in a pan over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes and cook stirring gently just until soft. Pour the tomato mixture over the green beans and toss gently to blend.

    I made this for for a small dinner party and it came out very good. I did skip the sugar and used grape tomatoes instead of cherry. I also sprinkled it with a mixture of italian bread crumbs and parmesan cheese, which gave it a nice touch. It was a nice change from plain ol' green beans!     This was very good! A neighbor went on vacation and he told me to help myself to his garden! He had a lot of green beans and cherry tomatoes so I found this recipe on the ingredient search. I omitted the garlic salt and sautéed 2 cloves of garlic and a small shallot (like another reviewer) in the butter and then added the tomatoes. I then added salt, pepper and basil and then I placed the green beans in the skillet so they could get a little of the spices cooked in them.     A great idea to perk up ordinary green beans, but I found the addition of sugar to be distracting-- too sweet even with only a tablespoon. Mind you my husband and children had no complaints! Will definitely try again without the sugar.  -  20 Nov 2005  (Review from Allrecipes US | Canada)
