1 ripe mango
2 tomatoes, finely chopped
1 spring onion, finely chopped
1 tbsp grated fresh root ginger
juice of 1 lime
2 tbsp maple syrup
4 unsmoked gammon steaks, about 200g each, trimmed of fat
bunch of watercress, to serve

Make the salsa: Using a sharp knife, halve, stone and peel the mango. Chop the flesh finely, then mix with the tomatoes and spring onion.
Add the flavourings: Add the ginger and half the lime juice to the chopped ingredients, stirring to mix evenly.
Make the glaze: Preheat a medium grill. Mix the remaining lime juice with the maple syrup and brush over the gammon steaks.
Cook the gammon: Place the gammon steaks on the grill rack and cook for 3-4 minutes on each side, or until golden brown. Serve the gammon on a bed of watercress with a spoonful of the salsa alongside.
*You can use a food processor on the pulse setting to chop the ingredients, but take care not to chop too finely or you will lose the texture. *The salsa can be made up to a day in advance, then covered and stored in the fridge until you are ready to cook the gammon.
