Easy peach trifle

    Celebrate the heavenly taste of fresh peaches in this very easy trifle-inspired dessert.

    Ingredients
    Serves: 8 

    • 6 large ripe peaches - peeled, pitted and sliced
    • 1 tablespoon fresh lemon juice
    • 450g vanilla yogurt
    • 1 teaspoon lemon zest
    • 1 (25cm) prepared sponge cake

    Method

    1. Place peaches in a large bowl and gently toss with lemon juice. Place 1 mug of sliced peaches in a blender, set aside remaining slices, and blend until smooth. Place yogurt into a bowl; stir in the peach puree and lemon zest until well blended.
    2. Cut the cake into squares and place half in the bottom of a glass dish. Spoon half of the peach slices over the cake. Cover with half of the yogurt mixture. Place remaining cake squares over the yogurt. Top with peaches, reserving 5 or 6 slices for garnish. Cover with remaining yogurt mixture. Garnish with peach slices. Refrigerate until ready to serve.

    Peaches are in season and this recipe is perfect for a stunning presentation and light and virtually fat-free enough to serve with anything. The angel food melts in your mouth. I used 32 ounces of Vanilla yogurt (twice as much as the recipe requires) and a packaged Angel Food cake. The lemon zest perks up the fresh peach flavors.     EASY!! Since now is not the time for fresh peaches, I used can. I'll make again because it was so easy & it doesn't have all the calories of using a pudding. May try other types of fruit.  -  16 Sep 2007  (Review from Allrecipes US | Canada)
