Vegan Jaffa cakes

    This is a vegan variation of Jaffa cakes using soya milk and vegan butter for the cake mixture. Rich, moreish and so simple.

    Makes: 12 pieces

    • 100g self-raising flour
    • 60g caster sugar
    • 100ml soya milk
    • 50ml vegetable oil
    • marmalade, any flavour
    • 50g vegan butter
    • 100g vegan dark chocolate

    1. Preheat the oven to 180 C / Gas 4. Grease a 12-cup bun tray.
    2. In a bowl mix the flour, sugar, milk and oil until well combined. Spoon the mixture into the prepared bun tray.
    3. Bake in the preheated oven until a tester in the centre comes out clean, 8 to 10 minutes.
    4. Leave to cool then place a spoonful of marmalade on each cake.
    5. Melt the butter and chocolate together and spoon over the top. Pop in fridge to set for about 1 hour.
