Wholemeal spelt bread

    Despite being a yeasted bread, this bread takes only about 2 hours from start to finish, including time for the rise.

    Ingredients
    Makes: 1 brot

    • 750g wholemeal spelt bread
    • 2 (8g) sachets fast action dried yeast
    • 2 teaspoons salt
    • 1 teaspoon light brown soft sugar
    • 1 teaspoon ground caraway
    • 1 teaspoon ground coriander

    Method

    1. Mix all the dry ingredients in a large bowl. Knead till smooth with an electric mixer, about 3 minutes. Cover and let rise at a warm place for 30 minutes.
    2. Grease a large loaf tin. Transfer the dough to the tin and even out the top with a wet spatula. Cover and let rise at a warm place until visibly risen, 20 to 30 minutes.
    3. Preheat the oven to 220 C / Gas 7.
    4. Bake for 30 minutes, then reduce the heat to 200 C / Gas 6 and bake until browned, another 20 minutes.
