Vegan spelt crepes

    These vegan pancakes can be topped or filled savoury with pan-fried spinach for a starter or sweet with strawberry rhubarb compote for dessert.

    Ingredients
    Serves: 2 

    • 150g spelt flour
    • 50g soya flour
    • 250ml sparkling water
    • 1 tablespoon groundnut oil
    • 1 pinch salt
    • vegetable oil for frying

    Method
    Prep:5min  ›  Cook:15min  ›  Extra time:15min  ›  Ready in:35min 

    1. In a bowl mix flours, water, oil and salt until smooth. Let sit for about 15 minutes. This rest period is important for successful crepes.
    2. Heat a crepe pan or a griddle, grease very lightly with vegetable oil and fry thin crepes. Flip over only after the bottom has lightly browned.
