Apple and cinnamon blondies

    Moist, cake-like blonde brownies that are perfect for autumn. Everyone asks me for this recipe once they've tasted them. Wonderful served warm with caramel sauce or vanilla ice cream.

    Ingredients
    Serves: 15 

    • 225g salted butter, softened
    • 200g caster sugar
    • 200g soft brown sugar
    • 2 eggs
    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 6 apples - peeled, cored and diced

    Method

    1. Preheat oven to 180 C / Gas 4. Lightly grease a baking dish.
    2. Beat butter, caster sugar, brown sugar and eggs together in a bowl using an electric mixer until smooth and creamy. Beat flour into butter mixture until well combined; add baking powder and beat again. Stir cinnamon into mixture. Fold in apples and spread the mixture into the prepared baking dish.
    3. Bake in the preheated oven until a skewer inserted in the centre comes out with moist crumbs, about 45 minutes.
