Moist, cake-like blonde brownies that are perfect for autumn. Everyone asks me for this recipe once they've tasted them. Wonderful served warm with caramel sauce or vanilla ice cream.

225g salted butter, softened
200g caster sugar
200g soft brown sugar
250g plain flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
6 apples - peeled, cored and diced

Preheat oven to 180 C / Gas 4. Lightly grease a baking dish.
Beat butter, caster sugar, brown sugar and eggs together in a bowl using an electric mixer until smooth and creamy. Beat flour into butter mixture until well combined; add baking powder and beat again. Stir cinnamon into mixture. Fold in apples and spread the mixture into the prepared baking dish.
Bake in the preheated oven until a skewer inserted in the centre comes out with moist crumbs, about 45 minutes.
