For these French-inspired madeleines with matcha, you need a madeleine tin.

130g caster sugar
2 tablespoons runny honey
3 teaspoons matcha powder
150g plain flour
1 1/2 teaspoons baking powder
1 pinch salt
125g butter, softened

In a bowl beat eggs with sugar with an electric mixer. Gradually add the honey until light in colour and fluffy.
Add matcha, flour and baking powder and beat to combine. Add the butter and beat until it is fully incorporated. Refrigerate for at least 2 hours until well chilled.
Preheat the oven to 240 C / Gas 9. Grease the moulds of a madeleine tin and dust lightly with flour.
Place 1 tablespoon of the mixture in each mould. It is not necessary to spread it out, as it will fill the mould during baking.
Bake until a small dip forms in the madeleines, 2 to 3 minutes. Reduce the oven temperature to 200 C / Gas 7 and bake until the madeleines puff up, about 4 minutes. Finally, reduce the temperature to 180 C / Gas 4 and bake till golden brown, about 3 more minutes. Remove from the moulds immediately and let cool on a wire rack.
