    Ingredients
    Makes: 12 cupcakes

    • 175g olive spread
    • 175g caster sugar
    • 2 teaspoons vanilla extract
    • 3 eggs
    • 175g self raising flour

    Method
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat the oven to 175 C / Gas 4. Line a muffin tin with cupcake cases.
    2. Add the olive spread and sugar together in a bowl and mix until creamy. Add the vanilla and mix in thoroughly.
    3. Add the eggs and flour and whisk until creamy.
    4. Pour mixture into cupcake cases and bake in the preheated oven until golden, about 30 minutes.
