Aunty Helen's Ginger biscuits

    Easy recipe for a family favourite. I have used this recipe for over forty years. It was given to me by my neighbour, Helen, in 1970. Try it, they are easy, to make and will be enjoyed anytime.

    • 6oz SR Four
    • 3ozs Brown Sugar
    • 2ozs Marg or Butter
    • 2ozs Lard
    • 1 dessert spoon Golden Syrup
    • 1 tsp Ground Ginger
    • 1/2 tsp now Bicarbonate of Soda


    1. Melt marg and lard in pan with syrup. Do not boil.
    2. Remove from heat.
    3. Mix all dry ingredients and add to pan.
    4. Mix well and form into small balls. Place on baking tray and cook for 12 to 15 mins. at 350 / 375' F. Cool on baking rack.
    5. When cool, keep in airtight tin.


    Makes about 15 depending on size. Add more ginger to your taste. Add more flour if mix is too oily. Double up on ingredients as required.
