Pizza with squash and rocket

    Red kuri squash works well in this recipe because you don't have to peel it, and it holds its shape well when cooked but if you cannot find it, you can also use (peeled) butternut squash instead

    Ingredients
    Serves: 4 

    • For the pizza dough
    • 2 level teaspoons dried active yeast
    • 330ml warm water
    • 2 tablespooons extra virgin olive oil
    • 1 teaspoon salt
    • 75g wholemeal wheat flour
    • 450 to 500g plain flour
    • For the topping
    • 3 tablespooons olive oil, to taste
    • 300g red kuri squash, sliced
    • 350g ricotta cheese
    • salt and pepper
    • 4 to 5 garlic cloves, crushed
    • 4 to 4 slices prosciutto
    • 1 bunch rocket

    Method

    1. Dissolve the yeast in a few tablespoons of the warm water and set aside for 10 minutes until it foams.
    2. Mix flour, salt, yeast and remaining water in a large bowl until the dough comes together as a ball. Knead with your hands or with an electric mixer until smooth, about 5 to 6 minutes.
    3. Place the dough back in the lightly oiled bowl and cover. Let rise for 1 hour.
    4. In the meantime heat 2 tablespoons oil in a frying pan and fry the squash slices on both sides until softened and lightly browned. Set aside.
    5. Preheat the oven to 200 C / Gas 6.
    6. Roll out the pizza dough to fit a large baking tin. Lightly oil the tin and place the pizza base on it. Spread ricotta over it and season with salt and pepper. Top with the squash slices. Mix the remaining 1 tablespoon oil with the garlic and drizzle over the pizza.
    7. Bake pizza in the preheated oven until golden brown at the edges, about 20 minutes.
    8. While the pizza bakes wash and dry the rocket and tear into large pieces. Cut the prosciutto into small strips.
    9. As soon as the pizza comes out of the oven, top with rocket and prosciutto and brush the edges with olive oil.

    Tip

    If you want to make the pizza vegetarian just omit the proscuitto.
