Butterscotch brownies

    Yummy, easy to make brownies with white chocolate chips and dried fruit.

    Serves: 10 

    • 450g white chocolate chips
    • 75g unsalted butter
    • 3 eggs
    • 175g light muscovado sugar
    • 175g self raising flour
    • 175g dried fruit, minced
    • 1 tsp vanilla extract

    1. Preheat the oven to 180 C / Gas 4. Grease and line a square cake tin (approximately 25x25cm).
    2. Melt 90g of the chocolate chips and the butter in a bowl over a pan of boiling water.
    3. Beat the eggs and the sugar in another bowl until light and foamy.
    4. Stir the melted chocolate mix into the eggs and sugar.
    5. Sift the flour in, then stir in the dried fruit, vanilla extract and the rest of the chocolate chips.
    6. Spread the mix evenly in the tin. Bake until brown, about 30 minutes. If the top starts to darken too quickly, place a sheet of tin foil over the top and keep cooking.
