Chop the onion (I like big chunks but do this to your taste). Cut the hot dogs into bite size pieces.
In a frying pan melt the butter and fry the onions until they start to go translucent, then add the hot dogs and fry until nicely coloured. (Again, this is to your taste, I like mine really caramelised).
Whilst the onions and the hot dogs are cooking, grate the cheeses.
Preheat the oven to 180 C / Gas 4.
Make up the instant mash as per the instructions on the packet. Add half the cheeses and mix to combine. Salt and pepper to taste.
Add the beans to the onion and hot dog mixture and then transfer to a medium sized baking dish.
Using an ice cream scoop (or a spoon if you don't have one), and dollop the potato mash onto the bean and hot dog mixture to make little "islands".
Sprinkle the rest of the cheeses into the gaps between the islands and then transfer to the oven. Bake until the cheese bubbles and the islands are nicely browned, 20 to 30 minutes.
You can add other things like chorizo, or bacon, different cheeses etc...
