A really quick, tasty recipe from store cupboard staples. Chases away the rainy day blues, or the winter wobbles. Uses tins and packet mixes so a bit of a cheat, but can't all be Cordon Bleu recipes...
100g Red Leicester Cheese (or any other you fancy using)
Salt and pepper to season
A little butter (just to fry the onion and hot dogs)

Chop the onion (I like big chunks but do this to your taste)
Open the tin of hot dogs, drain and cut into bite size pieces.
In a frying pan add the butter and the onions and fry until they start to go translucent, then add the hot dogs and fry until nicely coloured. (Again, this is to your taste, I like mine really caramelised).
Whilst the onions and the hot dogs are cooking, open the beans and grate the cheese.
Pop the oven on to about 180 C to preheat.
Make up the instant mash as per the instructions on the packet , adding half the cheese.
Add the beans to the onion and hot dog mixture and then transfer to a medium sized baking dish.
Using an Ice cream scoop (or a spoon if you don't have one), "dollop" the potato onto the bean and hot dog mixture to make little "islands"
Sprinkle the rest of the cheese into the gaps between the islands and then transfer to the oven. Leave until the cheese bubbles and the islands are nice and browned.
Serve with whatever you want, crusty bread, a salad or even chips, Mmmm, mmmm, mmmmmmmm.
We all have a recipe like this, but this is my take on it, so hope you enjoy. If you want to mix it up you can add other things like chorizo, or bacon, different cheeses etc...
