Stuffing bites

    These deep-fried stuffing bites have a mashed potato centre and will take your Christmas leftovers to the next level! Serve with any leftover cranberry sauce.

    Serves: 12 

    • 475g leftover mashed potatoes
    • 475g leftover stuffing
    • 2 eggs
    • 40g grated Parmesan cheese
    • 1 teaspoon herb seasoning, or to taste
    • 1 teaspoon salt
    • 1 teaspoon freshly ground black pepper
    • 200g panko breadcrumbs
    • oil for frying
    • 1 pinch sea salt
    • 275g cranberry sauce, warmed

    1. Mix mashed potatoes, stuffing, eggs, Parmesan cheese, herb seasoning, 1 teaspoon salt and pepper together in a large bowl until well combined.
    2. Pour panko breadcrumbs into a wide shallow bowl. Form 2 tablespoonfuls of stuffing mixture into a ball. Roll in breadcrumbs until well coated. Repeat with remaining stuffing mixture.
    3. Heat oil in a deep-fryer or large saucepan to 180 C. Fry stuffing balls, 4 at a time, until golden brown, 6 to 8 minutes. Transfer to a cooling rack; sprinkle with sea salt.
    4. Serve fried stuffing balls with warm cranberry sauce.
