Nut chocolate biscuits

    Use nuts of your choice for these biscuits: hazelnuts or walnuts, or a mix.

    Serves: 60 

    • 200g plain flour
    • 200g ground nuts
    • 100g caster sugar
    • 1 tablespoon cocoa powder
    • 200g butter
    • 100g plain chocolate for decorating

    1. Mix flour, nuts, sugar and cocoa in a bowl. Finely dice the butter and rub in. Knead until well combined and smooth.
    2. Wrap in cling film and refrigerate for 30 minutes.
    3. Line a baking tray with baking parchment. Preheat the oven to 200 C / Gas 6. i
    4. Shape the mixture into a logs of 1cm in diameter, then cut into 5cm pieces. Place on the baking tray.
    5. Bake in the preheated oven until lightly coloured, about 10 to 15 minutes. Let cool for a few minutes, then transfer to a wire rack and let cool completely.
    6. Melt the chocolate in a double boiler or in the microwave and dip each end of the biscuits in chocolate. Let harden completely before storing in airtight tins.
