Quarkstollen (Christmas stollen with quark)

    Stollen made with quark cheese is a quicker and simpler variation of yeasted German stollen. If you cannot find quark, use a firm strained Greek yoghurt instead.

    Serves: 15 

    • 500g plain flour
    • 2 teaspoons baking powder
    • 200g caster sugar
    • 2 to 3 teaspoons vanilla sugar
    • 1 pinch salt
    • 4 drops almond extract
    • 1 dash rum
    • 1 teaspoon grated lemon zest
    • 1 pinch ground nutmeg
    • 2 eggs
    • 125g butter
    • 250g quark or firm Greek yoghurt
    • 200g raisins
    • 125g ground nuts
    • 150g cut mixed peel
    • icing sugar for dusting

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix all ingredients in the listed order. Shape into an oblong loaf and place on a greased baking tin. Bake in the preheated oven until browned and a tester comes out clean, about 1 hour.
    3. Let cool, then over with a thick layer of icing sugar. Wrap in foil to prevent it from drying out.
