Chicken luncheon

    This is a recipe for homemade chicken luncheon, juicy and chewy. It is easy to make, contains only natural ingredients, no additives, and only little salt.

    Serves: 4 

    • 500g boneless skinless chicken breast
    • 1 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1 tablespoon plain flour
    • Salt and pepper to taste
    • 1 teaspoon paprika, to taste
    • 1 egg

    1. Mince the chicken.
    2. Add the flour.
    3. Add the onion, garlic powder, salt, pepper and paprika.
    4. Crack the egg into the chicken and mix really well until fully combined.
    5. Place a baking tray in front of you horizontally and line it with baking parchment. Using the parchment paper, shape the chicken mixture into a thick sausage. Trim the ends of the parchment paper and twist them as if you were wrapping a candy.
    6. Wrap the log with foil and and twist the ends the same way as the parchment paper to seal.
    7. Bring water to the boil in a large pot. Reduce the heat and simmer the wrapped log for 40 minutes.
    8. Turn off the heat and let it cool down slightly until you can safely remove the log from the water without burning yourself.
    9. Remove the log from the water and let it cool down completely. Unwrap it and cut it in thin circle-shaped strips.


    You can add veggies or olives to the luncheon in step 3.
