wintery apple and cinnamon muffins

    • 100g melted butter
    • 10 tbs sugar
    • 1 egg
    • 125ml milk
    • 135g self raising flour
    • 1 tsp cinnamon (and extra for the apples)
    • 2 shakes salt
    • 2 apples, into quarters then cut in half and in half again (dont have to be cooking apples)


    1. preheat the oven to 200c/290f/ gas 6. line a cupcake tin with muffin cases.
    2. combine the melted butter and the sugar together. then add the egg and stir, and add the milk.
    3. then sift the flour, cinnamon and salt into the mix and stir gently until its all combined. the mixture will look lumpy not smooth if not you've done it wrong. set the bowl aside.
    4. cut the apples into 16ths like said and place into a different bowl and sprinkle some cinnamon onto it. make sure all of the apples are covered in cinnamon.
    5. then add the apples to the mixture.
    6. pour the mixture into muffin cases make sure each one has an apple piece in it.
    7. place in the preheated oven for 15 minutes. take out and let cool before eating.
