One-tray baked prawn fajitas

    Prawns, peppers and jalapeno slices are tossed with olive oil and fajita seasoning and baked in the oven on one tray for a quick and easy clean-up! Serve with warm tortillas.

    Serves: 8 

    • 30g fajita seasoning
    • 1 tablespoon olive oil
    • 675g raw prawns, peeled and deveined
    • 1 red pepper, sliced into strips
    • 1 yellow pepper, sliced into strips
    • 1 red onion, sliced into strips
    • 1 jalapeno pepper, sliced into rings

    1. Preheat oven to 230 C / Gas 8.
    2. Mix fajita seasoning and olive oil together in a large bowl. Add prawns; toss to coat.
    3. Lay out seasoned prawns in a single layer on a baking tray. Add red pepper, yellow pepper, red onion and jalapeno pepper; mix with prawns and spread out evenly.
    4. Roast in the preheated oven until prawns are opaque, 8 to 10 minutes. Transfer prawns to a serving plate.
    5. Grill pepper mixture until lightly blackened, 2 to 3 minutes. Transfer to the serving platter with prawns.
