Don't be put off by school-dinner memories – properly cooked, semolina is a smooth and creamy pudding that tastes delicious with added fruit. It's so easy and full of goodness, and all the family will love it. Delicious!
*For blueberries, use any drained canned, frozen or prepared fresh fruit. *To make chocolate semolina, instead of blueberries or other fruit, stir in 100g chopped plain or milk chocolate or cooking chocolate drops with 1 tsp pure vanilla extract. It's good hot or chilled (with cream). *To make chocolate banana semolina, use 2 sliced bananas and 2 tbsp chocolate drops, with demerara sugar instead of white sugar. *To make pina colada semolina, use 200ml coconut milk and 300ml whole milk to cook the semolina. Fold in a 225g can pineapple pieces, drained, and serve sprinkled with toasted desiccated coconut.
For the best result, take time to bring the semolina and milk to the boil slowly. Stir all the time to avoid lumps.
