Serves: 4

  • 50g semolina
  • 500ml full fat milk
  • 2 tbsp sugar
  • grated zest of 1 orange
  • 150g blueberries

Prep:3min  ›  Cook:10min  ›  Ready in:13min

  1. Cook the semolina: Put the semolina in a pan and gradually stir in the milk. Bring to the boil over a medium heat, stirring continuously. This should take about 5 minutes. Simmer, stirring, for 5 minutes or until the semolina is thick, creamy and smooth.
  2. Sweeten and serve: Remove the pan from the heat and stir in the sugar and orange zest. Add the blueberries and fold them through gently, then divide the semolina among four bowls and serve immediately.

*For blueberries, use any drained canned, frozen or prepared fresh fruit. *To make chocolate semolina, instead of blueberries or other fruit, stir in 100g chopped plain or milk chocolate or cooking chocolate drops with 1 tsp pure vanilla extract. It's good hot or chilled (with cream). *To make chocolate banana semolina, use 2 sliced bananas and 2 tbsp chocolate drops, with demerara sugar instead of white sugar. *To make pina colada semolina, use 200ml coconut milk and 300ml whole milk to cook the semolina. Fold in a 225g can pineapple pieces, drained, and serve sprinkled with toasted desiccated coconut.

…cooking tip

For the best result, take time to bring the semolina and milk to the boil slowly. Stir all the time to avoid lumps.
