This sweet and tart cranberry "hedgehog" is made of sugared cranberries - a pretty edible table decoration for a Christmas party or Christmas dinner.

200g fresh cranberries
200g caster sugar
sugar for coating

Sort out any soft and blemished cranberries. Wash and dry the cranberries.
Heat the water and sugar in a small saucepan and stir until the sugar is dissolved. Place the cranberries in the syrup so they are fully immersed. Cover and refrigerate overnight.
The next day remove the cranberries from the syrup (reserve syrup for another purpose, like punch).
Let the cranberries drain well. Line a baking tray with greaseproof paper. Put extra sugar in a shallow plate and coat cranberries with sugar all over. Place them on the baking tray and let dry, about 3 hours.
If liked, prick each cranberry with a skewer or cocktail stick to secure it. Cut a large apple in half and insert the skewers into the apple to make a "cranberry hedgehog". You can also put the cranberries in a glass bowl. Eat within a few hours.
