Spiced red cabbage for Christmas

    Red cabbage tastes better when reheated - which comes in handy if you decide to make this as a side dish for Christmas!

    Serves: 6 

    • 1.5kg red cabbage
    • 2 whole star anise
    • ½ cinnamon stick
    • 1 teaspoon minced crystallised ginger
    • 5 tablespoons red wine vinegar
    • 1 large red onion
    • 50g ghee or butter
    • 60g granulated sugar
    • salt
    • freshly milled white pepper
    • 1 cooking apple

    1. Quarter cabbage and remove the core with a sharp knife. Coarsely grate cabbage or cut into strips.
    2. Crush star anise with a mortar and pestle. Mix in a large bowl with cabbage, ginger and vinegar and set to the side for 3 to 4 hours in the fridge.
    3. Cut onion in half and then into thin rings. Heat ghee in a pot with a heavy bottom and fry onion until softened. Add sugar and stir until caramelised.
    4. Add cabbage with all the liquid that has accumulated in the bowl. Add salt and pepper and 200ml water, so that the cabbage simmers in liquid but the consistency should not be like soup.
    5. Cover and simmer till the cabbage is soft, about 50 minutes. Peel, core and grate apple and add, stir to combine. Cook for additional 10 minutes.
