Preheat oven to 190 C / Gas 5. Arrange bacon on a baking tray.
Bake in the preheated oven until crispy, about 20 minutes.
Remove bacon from oven; increase oven temperature to 200 C / Gas 6. Transfer bacon to a large bowl. Add Brussels sprouts, dates, onion, parsley, vinegar, cranberries, pecans, olive oil, figs, fennel seeds, salt and pepper; toss to combine. Spread onto a baking tray.
Bake in the hot oven until tender and lightly browned, 15 to 20 minutes.
