Roasted Brussels with figs and bacon

    This side dish is a combination of Brussels sprouts with bacon, crunchy pecans, dates, figs and dried cranberries.

    Serves: 10 

    • 10 slices thick-cut bacon, cut in 2cm pieces
    • 700g Brussels sprouts, sliced in half
    • 6 dates, chopped
    • 1 sweet onion, chopped
    • 6 sprigs flat leaf parsley, chopped
    • 120ml balsamic vinegar, or more to taste
    • 40g dried cranberries
    • 40g whole pecans
    • 4 tablespoons olive oil, or more to taste
    • 50g quartered dried figs
    • 1 teaspoon fennel seeds
    • salt and ground black pepper to taste

    1. Preheat oven to 190 C / Gas 5. Arrange bacon on a baking tray.
    2. Bake in the preheated oven until crispy, about 20 minutes.
    3. Remove bacon from oven; increase oven temperature to 200 C / Gas 6. Transfer bacon to a large bowl. Add Brussels sprouts, dates, onion, parsley, vinegar, cranberries, pecans, olive oil, figs, fennel seeds, salt and pepper; toss to combine. Spread onto a baking tray.
    4. Bake in the hot oven until tender and lightly browned, 15 to 20 minutes.
