The important thing when roasting a leg of lamb is to keep it moist by basting it regularly with the accumulating juices. In this recipe, ready made potato croquettes are baked alongside the meat for the last 15 minutes.

1 leg of lamb (about 1.5kg)
4 garlic cloves, cut lengthwise
1 knob butter
salt and pepper
2 (550g) packets of potato croquettes
freshly chopped parsley

Preheat oven to 220 C / Gas 7. Place the leg of lamb in a large greased ovenproof dish (large enough to cook the croquettes on the side). Make 8 short slits in different places on the lamb with a small sharp knife and twist it slightly to create a pocket. Insert the garlic cloves into the pockets; sprinkle the entire leg with dabs of butter and season with salt and pepper.
Roast in the oven, basting it every 15 to 20 minutes with the accumulating juices. The roasting time is about 30 minutes for 1kg, 40 minutes for 1.5kg and 50 minutes for 2kg.
12 to 15 minutes before the end of the cooking time, arrange the potato croquettes around the leg of lamb and bake alongside until golden.
Slice the lamb and arrange on a platter. Spoon a bit of the gravy on top and sprinkle with parsley. Serve the remaining gravy separately with the potato croquettes.
