Gingerbread loaf cake

    This classic gingerbread loaf is simple to make and a delight to eat! It is best eaten the day after baking.

    Serves: 8 

    • 60g butter
    • 150ml honey
    • 150g dark brown soft sugar
    • 300g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon mixed spice
    • 1 teaspoon ground ginger
    • 1 teaspoon cinnamon
    • 100g candied orange peel, finely diced
    • 1 egg
    • 125ml milk

    1. Preheat oven to 170 C / Gas 3. Grease and line a loaf tin with baking parchment.
    2. Melt the butter in a saucepan, add the honey and sugar and stir until dissolved. Transfer to a mixing bowl and let cool.
    3. Add the sifted flour, baking powder and bicarbonate of soda. Mix well.
    4. Add remaining ingredients and mix well. Pour into loaf tin.
    5. Bake for 45 minutes, reduce heat to 150 C / Gas 2 and bake until a tester comes out clean, about 15 to 30 minutes more. Let cool on a rack, then let stand in a cool dry area 24 hours before serving.
