Baked chicken fajitas

    Roast chicken, peppers, onion and a mix of seasonings on one tray if you need to make fajitas for a crowd! Serve with warmed tortillas, salsa and soured cream.

    Ingredients
    Serves: 8 

    • 80ml vegetable oil
    • 2 teaspoons chilli powder
    • 1 teaspoon dried oregano
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1 pinch ground cayenne pepper
    • 675g chicken mini fillets, chopped
    • 375g sliced peppers, any colour
    • 1 onion, sliced
    • 10g chopped fresh coriander
    • 1/2 lime, juiced

    Method

    1. Combine vegetable oil, chilli powder, oregano, garlic, onion, cumin, salt, pepper and cayenne pepper in a large resealable food bag. Add chicken, peppers and onion; shake to mix.
    2. Marinate chicken mixture in the fridge, 30 minutes to 2 hours.
    3. Preheat oven to 200 C / Gas 6. Line a rimmed baking tray with foil.
    4. Spread chicken mixture onto prepared tin.
    5. Roast in the preheated oven, stirring halfway through, until chicken is cooked through and peppers have softened, 15 to 20 minutes.
    6. Sprinkle coriander and pour lime juice over chicken mixture; toss to distribute.

    Loved how easy this recipe was. I used some sliced S/B chicken breasts. I went with the exact amount of the seasoning, except for the salt that I doubled, and I cooked for 20 mn. The chicken and vegetables had released some of their juices and that might have been what caused this dish to taste under seasoned ?! Next time I will increase the heat to 425 and cook only for 15 mn.     Big hit in my home. I made it with green, yellow and orange peppers and was delicious. Very easy to make. I did heat the baking sheet before putting the mixture in it, helped with cleanup. Recommend this to all that like fajitas.  -  30 Sep 2018  (Review from Allrecipes US | Canada)

    Wow, Ive done fajitas for years, but these are quick, easy and delicious. I did cook at 425 for about 5 extra minutes. Next time I will cut the tenderloins in half. Delicious!  -  04 Sep 2018  (Review from Allrecipes US | Canada)
