Chocolate and fudge cupcakes

    When I made these, i was really gobsmacked. I was using another recipe but i didn't have very many of the ingredients so I improvised. And the result? A lovely, moist, enchanting cupcake, with the right amount of icing. My family proclaimed them "delicious" and decided to have another round of these little bites of joy!

    Makes: 20 cupcakes

    • 250g margarine
    • 300g caster sugar
    • 1 teaspoon vanilla extract
    • 3 eggs
    • 200g self-raising flour
    • 50g cocoa
    • 1/4 teaspoon salt
    • 100g fudge chunks
    • For the topping
    • 85g butter
    • 85g caster sugar
    • 200g condensed milk
    • 50g milk chocolate, cut into chunks
    • white chocolate stars to decorate

    1. Put 20 cupcake cases into a mini cupcake tray. Heat the oven to 160 C / Gas 2-3.
    2. Gently melt margarine in a large saucepan. Cool for 2 minutes. Add sugar, vanilla and eggs, then beat until smooth with a wooden spoon.
    3. Stir in flour, cocoa and ΒΌ tsp salt. Stir in fudge chunks.
    4. Evenly spoon mixture into cupcake cases. Leave enough space as they will rise a lot.
    5. Bake until risen all over and a skewer comes out clean, about 15 to 20 minutes.
    6. For the topping, gently heat butter and caster sugar together in a saucepan until both are melted.
    7. Stir in condensed milk and bring to a boil.
    8. Cool for 2 minutes, then stir in milk chocolate chunks and stir to melt.
    9. Spread over cooled cupcakes and scatter with decorations.


    Instead of milk chocolate, you can try chocolate orange for a Halloween treat, or dark chocolate. Just don't go overboard with the icing, as it is quite rich.
