Chocolate cupcakes with Halloween toppers

    You need not spend money on decoration for Halloween cupcakes, you can make your own inexpensive toppers. Just print out images you like from the Internet, cut them out and attach them to cocktail sticks.

    Ingredients
    Makes: 12 cupcakes

    • For the cupcakes
    • 60g butter, softened
    • 100g icing sugar
    • 2 eggs
    • 4 tablespoons milk
    • 300g chocolate sauce
    • 160g plain flour
    • 2 tablespoons baking powder
    • 1 pinch salt
    • For the icing
    • 225g cream cheese, softened
    • 60g butter, softened
    • 125g icing sugar, sifted
    • 1/2 teaspoon vanilla extract
    • orange and black food colouring, or cocoa powder
    • For the decorations
    • yellow and orange sugar strands
    • cocktail sticks
    • Halloween motives cut out of paper

    1. Preheat the oven to 180 C / Gas 4. Line a muffin tray with paper cases.
    2. Beat butter and icing sugar with the electric mixer until creamy. Add eggs one after another and beat well after each addition. Add milk and chocolate sauce and mix well. In a separate bowl sift flour with baking powder and salt and add to the dough. Mix until smooth. Fill the muffin cases to about two thirds.
    3. Bake in the preheated oven until a tester in the centre comes out clean, about 20 minutes. Cool for a few minutes in the tray, then remove from tray and cool completely on wire racks.
    4. For the icing, cut the cream cheese into cubes. Add to a bowl and stir with the butter until smooth. Gradually add icing sugar and vanilla extract and stir until the icing is smooth. Divide the icing among several bowls and colour to your liking orange food colouring, black food colouring and/or cocoa powder. Leave the rest of the icing white.
    5. Spread cupcakes with different coloured icing and decorate with sprinkles. Attach the paper motives to cocktail sticks and stick into the cupcakes. Chill until serving.
