1 hard boiled egg
1 1/2 tomato
1 dollop mayonnaise
sprouts such as alfalfa for garnish

Cut the ends off both ends of the egg so it stands securely. Remove the inside flesh and seeds of the tomato. Place the tomato half on top of the egg like a mushroom cap. Using a small piping bag, pipe tiny dots of mayonnaise onto the tomato. Place the 'mushroom' in a bed of alfalfa.
