About this recipe:
A lovely tomato-based potato curry.
1 tablespoon ghee
1 medium sized red onion, chopped
3 tablespoons of curry paste
680g new potatoes, diced
1 (400g) tin chopped tomatoes
300ml boiling water
salt and black pepper
- Cook the onions in the ghee in a large frying pan on a medium heat until soft. Add the curry paste.
- Add potatoes, stir untill totally mixed, then add water and cook until the potatoes are very tender (Around 1 hr 45 min), stirring every 15 minutes.
- Add salt and pepper to taste, then serve.
