Potato Curry

    A lovely tomato-based potato curry.

    Serves: 4 

    • 1 tablespoon ghee
    • 1 medium sized red onion, chopped
    • 3 tablespoons of curry paste
    • 680g new potatoes, diced
    • 1 (400g) tin chopped tomatoes
    • 300ml boiling water
    • salt and black pepper

    1. Cook the onions in the ghee in a large frying pan on a medium heat until soft. Add the curry paste.
    2. Add potatoes, stir untill totally mixed, then add water and cook until the potatoes are very tender (Around 1 hr 45 min), stirring every 15 minutes.
    3. Add salt and pepper to taste, then serve.
