Minced lamb pairs perfectly with sweet orange, fragrant spices, and refreshing green chillis and mint. The ingredients aren't too difficult to find if you find a good Indian shop. A perfect curry for a busy day, it only requires 15 minutes to prepare.

3 tablespoons oil
2 finely diced onions
4-5 garlic cloves, crushed
3 teaspoons finely grated ginger
2¼ teaspoons ground cumin
2 teaspoons ground coriander
½ teaspoon ground turmeric
½ teaspoon cayenne pepper
1 teaspoon garam masala
1 kg minced lamb
90 g plain yoghurt
250 ml orange juice
2½ teaspoons orange zest
1 bay leaf
1 long green chilli, seeded and finely sliced
1 handful coriander leaves, roughly chopped
1 handful mint, roughly chopped

Heat oil in a large frying pan over medium heat. Add onions, garlic and ginger and sauté for 5 minutes. Add cumin, coriander, turmeric, cayenne pepper and garam masala, and cook for another 5 minutes.
Increase heat to high, add lamb mince, and cook, stirring constantly to break meat up. Add yoghurt a tablespoon at a time, stirring so it combines well. Add orange juice, zest and bay leaf.
Bring to the boil, then reduce to a simmer. Cover and cook for 45 minutes, or until tender. While cooking, skim and discard any excess oil on the surface. Season well to taste, then stir through green chilli, coriander and mint before serving.
