Chocolate topped oat flap jacks

    This is a soft, chewy flap Jack recipe. So easy to make and even easier to eat. It looks a lot of ingredients but I make a big batch and ( reluctantly) share. You can always half the ingredients to make less. Be warned this is seriously moreish 😊

    Ingredients

    • 300g (10 oz) butter
    • 120g (4 oz) dark brown soft sugar
    • 120g (4 oz) light brown soft sugar
    • 60g (2 oz) caster sugar
    • 2 tablespoons runny honey
    • 2 tablespoons golden syrup
    • 550g (20 oz) porridge oats
    • 200g milk chocolate

    Method
    Prep:20min  ›  Cook:20min  ›  Extra time:1hr cooling  ›  Ready in:1hr40min 

    1. Oven 180 C grease and line a 30cm x25cm x 3cm baking pan. I use the aluminium disposable ones.
    2. In a large pan melt all the sugars, butter, honey and syrup together
    3. Mix in the oats and decant in the baking dish, smooth out with back of the spoon
    4. Bake in the preheated oven for 15 - 20 mins until golden
    5. Leave in the dish to cool
    6. Melt the choc in a dish over a pan of simmering water, don’t let the base of the dish touch the water or it will split
    7. Pour choc over the top of the cooled flap jack and spread out. Allow to set.
    8. Turn out the flap jack and cut into squares, the size is up to you but small individual pieces are what I do
