Beef stuffed mushrooms

    Mushrooms are stuffed with beef mince, garlic, green peppers and grated cheese to make these mouth-watering party nibbles.

    Ingredients
    Serves: 10 

    • 450g lean beef mince
    • 900g fresh mushrooms - stems removed, chopped and reserved
    • 60g butter
    • 75g chopped green peppers
    • 2 teaspoons minced garlic
    • 3 teaspoons dried parsley
    • 1 teaspoon dried basil leaves, crushed
    • 100g breadcrumbs
    • 225g grated mature Cheddar cheese

    Method
    Prep:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Preheat oven to 200 C / Gas 6.
    2. Place beef mince in a large, deep pan. Cook over medium high heat until evenly cooked; set aside.
    3. In a medium saucepan over medium heat, melt the butter and stir in the mushroom stems, green pepper, garlic, parsley and basil.
    4. In a large bowl, mix the cooked mince, mushroom mixture, breadcrumbs and grated cheese.
    5. Place the mushroom caps, upside down, on a large baking dish. Generously stuff each cap with the mixture.
    6. Bake in the preheated oven 15 to 20 minutes, or until the filling is golden brown.

    I made this before and this time I made a couple changes. I added 1/2 cup of water to the stuffing mixture because last time it was too dry. I also bought 3 pounds of mushrooms (but only used stems from 2 pounds of the mushrooms). It turned out to be the perfect amount of stuffing! I will definitately be making this again.
