Carrot and cream cheese rolls

    Super easy and good to make ahead: thin slices of carrot rolled up and filled with cream cheese. You need about 1 tablespoon cream cheese per roll.

    Serves: 12 

    • 2 large thick carrots
    • 1 tub (180g) cream cheese, plain or garlic and herbs, at room temperature
    • crackers or bread to serve

    1. Peel the carrots. Using a wide vegetable peeler, cut 2mm strips. The strips need to be be thin enough to be pliable without breaking. Gently roll up each strip and secure with toothpicks.
    2. Fill cream cheese in a small piping bag and pipe it into each roll. Refrigerate until serving. Serve with crackers or bread.
