Basic tomato soup

    This is a hearty, tasty and versatile tomato soup. I make this with my eight year old who loves the chopping and stirring. You can change the veg by maybe adding carrots, celery or courgettes.

    Serves: 4 

    • 1 onion
    • 1 red pepper, seeded
    • 2 cloves garlic
    • 1 tablespoon coconut oil
    • 2 teaspoons paprika
    • 2 teaspoons Italian seasoning
    • salt and pepper
    • 300ml chicken stock
    • 2 (400g) tins chopped tomatoes
    • natural yoghurt (optional)
    • fresh chilli sauce or chilli powder (optional), to taste

    1. Roughly chop the onion, pepper and garlic.
    2. Heat the oil in a deep pan and chuck in the onion, pepper and garlic. Fry till soft.
    3. Add the paprika and herbs and stir altogether. Season with salt and pepper.
    4. Now add the stock and bring to the boil while stirring. Reduce heat to a simmer and add the tomatoes. Season again.
    5. Blend the soup. We like it fairly smooth with the occasional chunk of pepper. If you find it too thick add some boiling water. Remember to adjust the seasoning if you do.
    6. As my son likes it spicy I added some natural yoghurt at the end.


    This is a kind of base for any veg soup. Add what you like but don't forget your seasoning.
