German Christmas fruit cake

    This German fruitcake is packed with fruit but is very light on the booze. It can be baked as a free form loaf of in a loaf tin. This is one of the first things I bake for Christmas as it keeps well.

    Serves: 12 

    • 3 eggs
    • 150g caster sugar
    • 75g chopped nuts of your choice
    • 50g chopped almonds
    • 100g dried pitted prunes
    • 100g dried pitted apricots
    • 100g dried pitted dates
    • 100g dried figs
    • 100g raisins
    • 1/2 lemon, juiced
    • 2 teaspoons mixed spice
    • 125g plain flour
    • 1 teaspoon baking powder
    • 3 tablespoons framboise liqueur or other fruit brandy
    • 1 handful peeled raw almonds for the garnish

    1. Preheat the oven to 170 C / Gas 3.
    2. Beat eggs and sugar in a large bowl till foamy and the sugar has dissolved. Add nuts and almonds and stir to combine.
    3. Chop the dried fruit and add to the mixture together with the raisins and lemon juice. Mix flour, mixed spice and baking powder; sift onto the mixture. Add brandy and mix well to combine.
    4. Tip into a well greased loaf tin and decorate with almonds.
    5. Baked in the preheated oven until browned and firm, about 1 hour.
