Hazelnut and rum chocolate truffles

    I make these toasted hazelnut and rum chocolate truffles every year and give them away as Christmas gifts.

    Makes: 20 rum balls

    • 150g hazelnuts
    • 60g dark chocolate
    • 200g caster sugar
    • 1 egg white
    • 2 tablespoons rum
    • 50g chocolate sprinkles

    1. Toast the hazelnuts in a heavy pan over medium heat, stirring, until the skins start to peel off. Allow to cool then rub with a tea towel to remove skins. Crush in a food processor.
    2. Grate the chocolate and combine with the hazenuts, sugar, egg white and rum into a smooth mix.
    3. With moistened hands, shape into 2cm balls and roll in the chocolate sprinkles. Place in mini cupcake paper cases to dry.
